White

Did you know that Europe is a rich in truffles? It is one of the largest regions in the whose soil grows white truffles. We are very proud of our excellent white truffle specimens: 546g, 579g, 598g, 631g and our biggest pride is a piece of whole 834g! This means success for every truffle hunter. White truffle is the most valuable mushroom of the world, therefore the most expensive one. Its price can reach even 10.000$ per kilogram. These mushrooms are gathered from October to January. There can be found pieces of 2 g to even 1 kg weight. The smell is intensive, impressive and unique.

Black

The black summer truffle is gathered from January to December. This mushroom is spreaded across Europe and belongs to the most spreaded kind of truffles. Its crust is black with warts on it and the section is white with brown spores. Black truffles are a type of highly-prized, subterranean fungi that belong to the truffle family. They are often referred to as "black diamonds" due to their rarity, distinctive aroma, and exquisite culinary value. These truffles are irregularly shaped, with a black exterior and a dark, marbled interior, which ranges from dark brown to black, depending on their maturity. They grow in a symbiotic relationship with the roots of specific tree species, primarily oak, hazelnut, and some other deciduous trees. Trained truffle-hunting dogs or pigs are used to locate the truffles, as they have a keen sense of smell that can detect the truffle's distinct aroma.

How to keep truffles

Fill about 50% of a glass jar with rice and then put the fresh truffles in it. If truffles were healthy, they will stay fresh for about 7 to 10 days this way. Keep the jar in the fridge. Also, the rice takes aroma from truffles and it can be also used for a dish.

Wrap the cleaned truffles one by one in a napkin and then put them in a glass jar. The jar mustn’t be filled to the top, there should be about 30% of the space left. The napkins should be changed every day. The truffles stay fresh up to 10 days this way. Keep the jar in the fridge.

Beside its gastronomic value, white truffle is extremely healthy, because it renews the grey brain cells and strengthens the body. It usually grows in surroundings of oaks, poplars, hazels. . .
